chicken fajita salad with scallion vinaigrette




Chicken Fajita Salad with Scallion Vinaigrette
Dressing recipe below. Salad recipe not exact - this can feed one or one hundred!

Ingredients
  • Chicken breast(s) (1/2 to 1 chicken breast per salad)
  • Homemade fajita seasoning
  • Sliced, fresh mushrooms (1-2 baby portabellos per salad)
  • Yellow onion, chopped into bite-sized chunks, as shown above (1/8 - 1/4 small onion per salad)
  • Crunchy lettuce, such as Romaine, washed, dried and torn
  • Tomatoes, chopped
  • Black beans, drained and rinsed
  • Canned corn, drained and rinsed (grilled, fresh corn would be even better!)
  • Mexican cheese (I only had colby jack, which I cubed, as shown)
  • Salsa
  • Other toppings, such as jalepenos, cilantro, sour cream and lime
  • Salt/pepper
  1. Chop chicken into chunks and season chicken liberally with homemade seasoning (about two tbsp. per pound of chicken). Heat a frying pan over medium heat with a little olive oil. Add chicken and saute until pink is just gone and meat is juicy. Remove from pan. Add a little more oil, the mushrooms and the onion, and saute, seasoning with salt and pepper as needed. Remove from pan when onions are slightly browned on the edges and mushrooms are soft.
  2. Arrange salad in a large bowl by adding the lettuce, tomatoes, corn, beans, mushrooms, onions, cheese and chicken. Add salsa and desired toppings. Serve with vinegairette.
Scallion Vinaigrette 
Recipe makes about a cup of dressing and keeps well in a sealed jar on the counter for a few days.
  • 1/4 cup white wine vinegar
  • 1 tablespoon Dijon mustard (okay to go a little over!)
  • 1 teaspoon honey
  • 2 tablespoons chopped chives
  • Salt and freshly ground black pepper
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup thinly sliced scallion, green and pale green part

  1. Stir the vinegar through the salt and peppper together in a shallow bowl.
  2. While whisking furiously, drizzle the olive oil into the mixture slowly, allowing it to emulsify. When the oil is completely incorporated, the dressing should be thick and consistent, as shown above. Gently stir in the scallions and taste to see if it needs additional salt or pepper.

tex-mex beans and peas over rice

So, I'm in a produce-eating competition at work. The idea isn't necessarily to replace your meats and carbs with produce (although I'm finding that something has to give!), but rather to incorporate a variety of colorful, fresh foods into the diet. The competition runs for eight weeks, so don't be surprised if you see more veggie-, bean- and fruit-based dishes in the next month or two!

This also means that I'm upping the ante on my already robust fresh produce intake. I'm averaging 10-12 different kinds of produce each day, which has been surprisingly easy. It just means that I have to be diligent about snacking, really. Most of the time, I get distracted by things I need to do, and I forget to eat my afternoon apple or carrots. Now, I'm making myself get up to eat. I also have discovered a yummy spinach smoothie recipe that blends the greens with yogurt, honey, cinnamon or peanut butter, a little orange juice and ice cubes. Filling and super healthy for breakfast.

So, this is a recipe that I made for lunch one Sunday. It brought in tomatoes (red and yellow), black-eyed peas and black beans for a powerhouse meal. You could also add spinach if you have it, but I had used all of mine in my morning smoothie. :)
Tex-Mex Beans and Peas over Rice
  • 1 cup white or brown rice
  • 1 tablespoon extra-virgin olive oil
  • 1 cup fresh salsa, plus more for topping
  • 1 teaspoon ground cumin
  • Black pepper
  • 1 14-ounce cans black-eyed peas (undrained)
  • 1 14-ounce black beans (drained and rinsed)
  • 3 cups baby spinach
  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded cheddar cheese 
  • Sour cream, avocado, tomato wedges and lime, for serving (optional)
Cook the rice as the label directs. Meanwhile, heat the olive oil in a medium saucepan over medium-high heat. Add the salsa and cumin and cook, stirring, until the salsa is soft, about five minutes. Add the black-eyed peas, plus the liquid from one of the cans. Cook, stirring occasionally, until the beans are creamy and tender, about 12 minutes. Add some black pepper to taste.

Fluff the rice with a fork and divide among bowls. Add the spinach and cilantro to the black-eyed pea mixture and stir until wilted, about one minute; spoon evenly over the rice. Top each serving with a few avocado slices, some cheese and more salsa. Serve with desired toppings.

texican turkey calzones

These are delicious. And lean. And ... Mexicany. Perfect.

It seems that I've been on a Mexican kick lately; I've just realized that. But, who's complaining? This filling meal-in-a-pocket is made with lean turkey, onions, peppers, tomatoes, garlic and yummy spices - all of which is good for you! Enjoy with spicy toppings, avocado, sour cream, cilantro and lime.

Texican Turkey Calzones
Serves 4
Ingredients:
  • 8 oz lean ground turkey
  • 1/2 c chopped onion
  • 1/2 c green bell pepper
  • 1/2 c red bell pepper
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 2 garlic cloves, minced
  • 1/2 c salsa
  • Handful of fresh, chopped cilantro
  • Salt, pepper
  • 1 ball or tube of refrigerated pizza dough (about 11 oz.)
  • 3/4 c Mexican or cheddar cheese, shredded
  • 1 egg
  • Toppings
Directions
  1. Preheat oven to 425. Spray a foil-lined baking sheet with cooking spray.
  2. Heat a large, deep skillet over medium-high heat. Add ground turkey and cook until pink is just gone, stirring to crumble. Remove from pan, wiping out any excess fat. Add a little olive oil to the pan and add the onion through garlic. Season with salt and pepper. Cook about four minutes, or until the vegetables are tender. Add turkey and salsa to pan. Reduce heat to low and allow to sit for a few minutes. Taste and add more cumin, chili pepper, salt and pepper if needed.
  3. Unroll or roll out dough. Divide into four equal portions. Spoon ~1/2 c portions onto the dough squares and top with 3 tbsp. cheese each (I used a shallow bowl to hold the dough for this step, as shown above). Fold dough over and pinch seams tightly. Place all four calzones on the foil-lined, greased baking sheet.
  4. In a small bowl, whisk the egg. Brush egg evenly over the tops of each calzone and sprinkle with a small amount of chili powder (I also added dried parsley for color). Bake calzones for 12-13 minutes, until tops are browned and the bottoms are cooked. Serve with desired toppings.
Note: I tripled the recipe for a get-together, which is why the photos show an alarming amount of food!

tortilla torte from my childhood

This meal is a blast from the past (circa 1993-ish) for me. That year, a summertime ear infection from too many days in the pool prompted my stepmom to take me to the doctor for treatment. In the waiting room, she came across this recipe while flipping through a magazine and thought she'd try it out for dinner. And with four growing girls, she liked that it was a large, filling dish. One taste and we were all hooked!

This has been a family favorite ever since then, although I've added a couple of things, including sauteed onions and garlic, whole-wheat tortillas, extra spices and a can of  green chilies for flavor. Serve it with hot sauce or jalapenos, sour cream and salsa, and a big, fat salad for a great, healthy dinner!

Tortilla Torte
Ingredients
  • 1 lb lean ground beef
  • 2 cans diced tomatoes, undrained
  • 1 small can diced green chilies, undrained
  • 1 can black beans, drained and rinsed
  • 1 small onion, chopped
  • 2-3 garlic cloves, minced
  • 1 tsp. cumin
  • 1/2 tsp chili powder
  • 3 large whole-wheat tortillas
  • 2 c cheddar or Mexican cheese blend, shredded
  • Salt, pepper, olive oil
  • Toppings such as: salsa, sour cream, cilantro, spicy things
  1. Start by sauteing the beef over medium heat. When the pink is just gone, remove from pan and allow to drain on paper towels to remove any extra fat. Wipe any excess fat from the pan and add a swirl of olive oil, the onions and garlic, and some salt and pepper to taste.
  2. When the onions are transclucent, add the beef back to the pan, along with the tomatoes, chilies, beans and spices. Stir together and allow to cook together for five or so minutes.
  3. Spray a cast-iron skillet and lay the first tortilla down. Using a slotted spoon, transfer 1/2 of the filling and 1/3 of the cheese on top, spreading it evenly over the tortilla. Repeat the process until you have two layers of the meat-bean-cheese goodness, topping with the final tortilla with the remaining 1/3 of cheese.
  4. Cover the cast-iron pan with a lid and cook over medium-low heat until the cheese is melty on a layer or two below the top tortilla. Throw it under the broiler until the top is toasty and the torte is bubbly, like below (5-7 mins).
  5. Serve immediately with salsa, sour cream, hot sauce, jalapenos, cilantro and any other toppings you like.

chicken fajitas with avocado

If you're looking for an easy weeknight meal that packs in lots of veggies and flavor, this is it. Just make the fajita seasoning and rub it on the chicken in advance (I did it the morning of, but overnight would be even better) and let it mellow in the fridge.

Fajita Seasoning
Approximately two tablespoons equals one store-bought seasoning packet. Use this amount for one pound of chicken. Try this healthy salad recipe with the leftover seasoning!
  • 1 tablespoon cornstarch
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon sugar
  • 1 crushed chicken bouillon cube
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon cumin

 Stir together the above ingredients. To make a marinade, mix with 1/4 to 1/3 c of oil and add to a bag or shallow dish with the meats or vegetables.
 



Prepare your ingredients:
  • One small onion, chopped
  • One bell pepper, chopped
  • 4-6 oz. mushrooms, cleaned and sliced
  • Two garlic cloves, diced
  • Two chicken breasts, sliced into strips
  • Salt and pepper
  • Fajita-sized tortillas (whole-wheat, if possible)
  • Avocado, sliced
  • Shredded cheese
  • Sour cream
  • Hot sauce, if desired
  1. Mix seasoning with desired about of oil and combine with chicken. Refrigerate until ready to use.
  2. Heat a pan to medium heat and add the chicken and marinade. Stir fry until just cooked and remove from pan to a paper-towel lined plate. If the pan has excessive oil in it, wipe it with a paper towel, leaving a little behind. Add the veggies to the same pan, season with salt and pepper to taste, and saute until soft. Add the chicken back to the pan.
  3. Serve desired amount in tortillas with cheese, sour cream and avocado. Top with hot sauce, if desired.

summer salads, part three: spinach and bacon salad with grilled peaches and homemade bleu cheese dressing

Bacon lovers, unite! Here's a salad that anyone will like (unless you're a bacon hater ... but I don't believe in those people). Salty from the bacon, sweet from the peaches, spicy from the red onion, creamy and tangy from the dressing - your whole mouth will be happy. And so will your belly.

The other neat part? Spinach is a true super food. It has twice the amount of iron as other leafy greens and it's a really great source of fiber, folate and a myriad of Vitamins, like A and K. But its superpowers really get amped up by the Vitamin C in the peaches which help the otherwise poorly absorbed iron absorb. And the fat in the bacon helps your body take in the vitamins.

Yep, you have the green light to eat bacon. And all is right with the world again ...
Spinach and Bacon Salad with Grilled Peaches and Homemade Bleu-Cheese Dressing

Ingredients
For the salad:
  • 1/2 cup pecans
  • 4 ripe peaches, pitted and quartered
  • 2 tablespoons vegetable or olive oil
  • 1/2 pound hickory-smoked bacon, roughly chopped
  • 8 cups baby spinach
  • 1/2 small red onion, thinly sliced
For the dressing:
  • 1/2 cup (4 ounces) crumbled Danish blue cheese
  • 1/4 cup buttermilk
  • 1/4 cup sour cream
  • 1/4 teaspoon sugar
  • Salt and freshly ground pepper
Directions
  1. Preheat the oven to 350 degrees. Place the pecans on a baking sheet and toast in the oven until golden and fragrant, 6 minutes; roughly chop.
  2. Preheat a grill to medium-high heat on one side and medium heat on the other. Lightly brush the peaches with oil and grill over medium until nicely marked, about 4 minutes per side. Meanwhile, place a flat cast-iron skillet on the grill over medium-high heat. Add the bacon and cook until crisp; transfer to a paper-towel-lined plate.
  3. Combine the spinach, red onion, grilled peaches, pecans and bacon in a large bowl.
  4. Make the dressing: Mash the blue cheese with a fork in a bowl. Mix in the buttermilk, sour cream, sugar, and salt and pepper to taste. Toss with the salad just before serving.

white bean chicken chili


The perfect summer chili, I have been making this recipe for nearly six years. It's been a crazy past couple of weeks here and I wanted something easy and delicious for dinner. After a long week on its own account, our nephew was born and suddenly we found ourselves buzzing with visiting family and baby-oriented events, which didn't leave me with a lot of time for leisure (like cooking for myself and writing!). So, when I realized that I had a free Friday, night I knew it was on between me and my kitchen. Pulling out my old trusty recipe notebook, I knew I wanted this go-to favorite when I saw it.

Great paired with a salad and cornbread, you'll find that you have a filling and inexpensive, healthy meal that's easy enough to throw together on a weeknight. A good beer helps to wash it down, too.

White Bean Chicken Chili
Serves 4
  • 2 chicken breasts, chopped into bite-sized chunks
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 (4 oz) can chopped green chilies, drained
  • 3 tbsp flour
  • 2 tsp cumin
  • 2 (15 oz) cans Great Northern Beans
  • 14.5 oz chicken broth
  • Chicken seasoning
  • Olive oil
  • Salt and pepper
  • Toppings: cheese, scallions, sour cream, salsa, cilantro - whatever you like
  1. Heat a deep pot with olive oil over medium-high heat. Saute the chicken, sprinkling it with the chicken seasoning like you would salt and pepper, until it's almost cooked and starting to brown. Remove from pan. Add chopped onion and saute 2-3 minutes (adding a little more olive oil, if needed), salt and peppering lightly. Add garlic and saute until the onions are translucent. Add chilies, cumin and flour and stir for two minutes. Add beans and broth. Bring to a boil and reduce the heat to a simmer. Simmer 10 minutes. Add chicken and cook until hot.
  2. Serve in bowls and top with cheese, scallions, sour cream, salsa, cilantro, or whatever toppings you like.

the tacos

Thanks, Roasted Tomato and Corn Salsa with Charred Poblano Peppers.  A little grilled pork tenderloin, some sliced avocado (it's under there, I promise), Mexican cheese and sour cream on a whole-wheat tortilla = crazy good and easy dinner, especially when the salsa is made in advance.

beef shepherd's pie topped with cheesy garlic smashed potatoes

This is one of my husband's favorite dinners. It's meaty, chocked full of veg and layered with cheesy, fluffy, garlicky smashed potatoes. And it's easy! I make it every couple of months, when I'm craving beef and potatoes. It never fails to satisfy. If you want to have a lighter dinner, serve it with a leafy-green salad.

Also, I use these smashed potatoes as a side dish frequently ... they're fantastic with or without the pie underneath. Enjoy!

Beef Shepherd's Pie Topped with Cheesy Garlic Smashed Potatoes
Ingredients
  • 1 1/4 lb red potatoes (use up any extra potatoes by roasting them with garlic and rosemary)
  • 3 large whole garlic cloves, peeled 
  • 3/4 c sour cream
  • 1/2 c cheddar cheese, divided
  • 1 lb. lean ground beef
  • 2 tbsp flour
  • 4c frozen mixed veggies (corn, lima beans, peas, carrots, onions, whatever you can find in the freezer section)
  • 3/4 c beef broth
  • 2 tbsp tomato paste (or ketchup)
  • Optional: 2-3 shakes of Worchestershire sauce
  • Salt/pepper
  • Crushed red pepper
  • Dried parsley
  1. Cover potatoes and whole garlic with water in a large saucepan and bring to a boil on high heat. Reduce to low and simmer for 20 minutes or until tender. Drain. Return to pan and mash with 1/4 c cheddar cheese and sour cream. Season generally with salt and pepper (and then taste them for "quality purposes").
  2. Preheat oven to 375 degrees. Brown beef in a deep dutch oven. Drain fat from pan. Add flour to meat in the degreased pan; cook 1 minute. Add veggies, broth and tomato broth and Worchestershire, if you like it. Cook 5 minutes. Season with salt and pepper, and a pinch or so of crushed red pepper.
  3. Cover the meat-veg mixture evenly with mashed potatoes. Top with a little dried parsley for color. Bake for 18 minutes sans lid. Remove from oven and sprinkle with remaining 1/4 c cheese. Bake for two more minutes; serve.

easy, healthy side dishes

Running out of ideas for new side dishes? Check out these recipes and tweak them to your taste. Easy, healthy and delicious, these will freshen up any weeknight dinner.

Italian-style Vegetables
This is an easy use-up-what-you-have-in-the-fridge type of side dish. Swap out any of the veggies for what you have, but these are especially tasty together.

Ingredients
  • Zucchini, halved lenthwise and then sliced crosswise
  • Onion, sliced into 1-inch long strips
  • Mushrooms, quartered
  • Italian dressing (homemade is better)
  • Salt and pepper
  1. Toss the zucchini, onion and mushrooms together in a pan with a swirl of prepared Italian dressing so that all of the pieces are evenly coated. Turn the heat up to medium and saute until they are starting to brown and the zucchini and onion are soft.
  2. Season with salt and pepper to taste and serve.

Garlic and Sun-dried Tomato Corn Muffins (shown above)
  • 1 package corn-muffin mix, such as Jiffy
  • 1 cup frozen whole kernel corn, thawed
  • 1-2 garlic cloves, minced
  • 1/3 cup diced sun-dried tomatoes, chopped
  • 1/3 cup buttermilk
  • 1/3 cup sour cream
  • 1 large egg
  • Cornmeal
  1. Preheat the oven to 375 degrees. Line muffin tin with nine papers. 
  2. In a large bowl combine the muffin mix, corn, garlic and sun-dried tomatoes. Stir to combine. In a small bowl whisk together the buttermilk, sour cream and eggs until well blended. Add the buttermilk mixture to the muffin mix. Stir to combine.
  3. Spoon the mix into the muffin tins, filling up the cups about halfway. Dust with a sprinkle of cornmeal. Bake until golden brown on top, about 15 minutes.


Pan-grilled Corn
The next time you sear chicken in a pan, consider this yummy and flavorful corn side dish. When the chicken is done cooking, wrap it in foil and start the corn. The flavors can be easily modified to suit any style dish.

Ingredients
  • 4 c corn
  • 1 fresh chile, like serrano or jalapeno, diced (and seeded if you can't take the heat)
  • 1 tbsp chopped garlic
  • 1-2 tbsp water
  • 2 tbsp white wine vinegar or the juice of one lime
  • 1/2 c chopped cilantro (or basil)
  •  Salt/pepper
  1. Add a little oil to the pan with the bits from the chicken still in it; set it over medium-high heat.  When the oil is hot, add the corn, chile and garlic; let it cook for a minute. As the corn browns, begin to turn it with a spatula. Do this until all the corn is browned on at least one side.
  2. Remove from heat and add salt and pepper, the water and stir in the vinegar or lime juice and the herbs. Serve immediately with the chicken.

Roasted Red Potatoes
There is nothing more satisying that a pile of crispy-on-the-edges and soft-in-the-middle red potatoes. Great for summery dinners and even better in the winter. Mix it up with whatever fresh herb you have, but I like rosemary and garlic – and dipping the quartered potatoes in ketchup when they're done.
Ingredients
  • Red potatoes – about 4 small to medium ones per person, quartered
  • 1 clove garlic per person
  • Handful of rosemary, coarsely chopped
  • Salt/pepper
  • Olive oil
  1. Preheat oven to 400 degrees. In a shallow baking pan, toss the quartered potatoes with olive oil, garlic and rosemary. Season very generously with salt and pepper. (If you like it spicy, add a little cayenne pepper).
  2. Roast for ~45 minutes, until the edges are crispy and browned. Stir once or twice during the cooking process and adjust the salt and pepper before serving.

Roasted Asparagus
Ingredients
  • Asparagus, woody stems removed
  • Fresh-shaved parmesan
  • Salt/pepper
  • Olive oil
  1. Preheat oven to 400 degrees. Drizzle asparagus with olive oil in a jelly-roll pan. Season with salt and pepper.
  2. Roast for 18 minutes. Remove from oven, stir around, and top with Parmesan. Roast for two more minutes. Taste, season if needed and serve.

rainy day tomato basil soup and grilled cheddar cheese

A classic in every sense of the word, tomato soup and grilled cheese takes me back ... well, to college, when I started to actually like tomato soup. Grilled cheese, though? Yes, please. I have fond childhood memories of the gooey little sandwich melting in my mouth. My mom used to make it with mozzarella and the cheese would streeeetch as I pulled the halves apart, fingers glistening with butter. Delicious.

Now, as an adult, I like to make this meal for dinner every once and a while – especially if it's raining or cold out. To make it a little healthier, I have been known to spritz a pan with canola oil instead of using butter, but it's not nearly as good, so I usually splurge and go for the real stuff. Oh, and I'm a cheddar girl – sharp cheddar. There is no other substitute, unless you consider brie or some other fancy cheese. Then I'm in all the way. Make this next time you're stuck in the house on a rainy Sunday, and then curl up for a nap.


Homemade Tomato Basil Soup
Serves 6-8
  • 1 small onion, chopped
  • 3 garlic cloves, chopped
  • 2 cans diced tomatoes or stewed tomatoes (14.5 oz each)
  • 14 oz. chicken broth (homemade is better!)
  • 6 oz. tomato paste
  • 3/4 c skim milk*
  • 2-3 tbsp sour cream*
  • 1/2 c basil, julienned and divided (sliced into ribbons)
  • Optional: crumbled bacon
Directions
  1. Cook onion in a stock pot until translucent.  Add garlic and cook the mixture ~3 minutes longer. Add tomatoes, broth and paste. Bring to a boil, then reduce the heat to low. Simmer 20 minutes, stirring occasionally.
  2. Stir in dairy; simmer 10 more minutes. Add 1/4 c basil. Remove from heat and blend with an immersion blender until smooth.**
  3. Spoon hot soup into bowls and top with remaining basil and, if desired, crumbled bacon. Serve with grilled cheese (I prefer extra toasted, as shown above) 
*If you don't have skim milk and sour cream, you can use 1 c of whipping cream or half-and-half instead.
**If you don't have an immersion blender, you can whir the soup in a blender until smooth. Just be careful transferring the hot soup to the machine.

sunday brunchday

The weekends call for hot coffee and slow brunches that leave you too full to eat lunch or move off of the couch. The past two weekends have been filled with fun activities with friends and good exercise opportunities (as well as not-so-fun-yet-physcially-demanding-yardwork). So to honor the weekends, the last two have featured really yummy brunches. The first, Southwest egg burritos with black beans, salsa and sour cream, fueled a 3,000-yard swim. Cheeseandrice, it was good. The second, this past weekend, was oatmeal-cranberry pancakes – hearty, filling and tasty.

The best part was that these recipes were both made with healthy items we had on hand. And they each took less than 20 minutes, even with the flavor-oomph tortilla-charring and oatmeal cooking. Here are the secrets of the trade:

Oatmeal-Cranberry Griddle Cakes (adapted from Mark Bittman)
  • 1/4 c whole wheat flour
  • 1/4 c all-purpose flour
  • 1/4 rolled oats, dry
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp pumpkin-pie spice
  • 1/2 tsp salt
  • 1 egg
  • 1 c milk
  • 2 cups left-over cooked and cooled* oatmeal
  • 1/2 cup dried cranberries or other fruit, fresh or dried (sliced bananas or blueberries would be really good)
  • Syrup or apple butter
  1. Preheat oven to 200. Combine flours, oats, baking powder, spices and salt in a large bowl. In a separate bowl, whisk the egg and milk until well blended; stir in cranberries and cooked oatmeal* until just incorporated. Add the oatmeal mixture to the flour mixture and stir gently, being sure not to overmix. It should look like thick pancake batter.
  2. Heat a large griddle over medium heat with a swirl of oil in the pan. Spoon the batter into little patties in the pan and cook two to three minutes on each side, flipping when bubbles form and the bottoms are slightly browned. Note: these do take a little longer to cook than regular pancakes, I think because of the moistness of the cooked oatmeal.
  3. Transfer them to the warm oven on a heat-safe plate, tented with foil. Serve with syrup or apple butter.
*If you don't have leftover oatmeal, then make 2 cups per the box instructions. When adding the hot oatmeal to the eggs, temper them by adding one small spoonful at a time and whisking until incorporated. Do this 3-4 times until the temperature of the eggs has risen slowly. This will prevent accidental scrambling your eggs from the heat (but on the upside, it's kind of a neat science experiment if it happens ... ).

Southwest Egg Burritos for Two (my own recipe)
  •  Two whole-wheat tortillas
  • 1/2 c cheese
  • 1/2 can black beans, drained and rinsed
  • 4 eggs
  • ~2 tbsp milk
  • 1/2 tsp each cumin and chile pepper
  • Handful of green onions or chives
  •  salt and pepper
  • Salsa, sour cream, cilantro and any other Southwest-style toppings that you like
  1. Heat a pan over medium heat and lightly coat it (use a oil spritzer if you can) with canola oil. Lay a tortilla in the pan and watch for it to bubble. Lift it ever so slightly. If there are darkish brown char marks, flip it and repeat on the other side. Repeat with one more tortilla. Put on plates and sprinkle with Mexican cheese (or colby-jack or cheddar).
  2. While this is happening, heat your drained and rinsed beans in a pot or in the microwave. In the now-empty, warm tortilla pan, scramble four eggs with a little milk. Season them with salt, pepper, about a 1/2 tsp. cumin and chile powder, each, and some green onion or chives, if you have it. Top the cheesy tortillas with the southwestern-scrambled eggs. Next layer the tortillas with spoonful or two of the warmed beans each, and salsa, sour cream and cilantro, as desired.
And, if you like heat as much as my husband does, sprinkle generously with "spicy flakes," a.k.a.: crushed red pepper, or jalapenos. (We go through a bulk bottle of "spicy flakes" just about every six months thanks to him ... ) Note: I took photos only to realize that my SD card was in the computer, not the camera. *Sigh ... guess I'll have to make these again next weekend!

I recommend serving these meals with fruit and wearing expandable pants. Happy brunch day!
